Zucchini caviar with fried onions is a tasty and appetizing preparation for the winter. Thanks to the successful combination of all ingredients, squash caviar has a harmonious taste. In winter, it is always nice to eat squash caviar. Having prepared an appetizer in the form of caviar from natural ingredients, you can be sure of its usefulness.

Rinse the zucchini and cut into small pieces. If necessary, remove the peel and seeds from the fruits. In a preheated frying pan with vegetable oil, stew the chopped zucchini. As soon as they become soft, turn off the gas.

Peel the carrots, rinse and grind them on a coarse grater. Onions also need to be peeled and chopped. Fry vegetables in vegetable oil until tender.

We peel the garlic cloves from the husk and pass them through a press.

In one container we combine zucchini and fried onions with carrots. We pass the resulting vegetable mixture through a meat grinder or interrupt with a blender into a homogeneous mass.

Next, transfer the resulting mixture to a saucepan or cauldron, put on fire and simmer for about 60 minutes over low heat. Then add salt, granulated sugar, ground pepper and tomato paste to the squash mixture. Mix everything and cook for about 30 minutes more. 5 minutes before cooking, add chopped garlic and vinegar to the caviar. Mix everything and remove the cauldron from the fire.

We put the ready-made squash caviar into sterilized containers and close it tightly with lids. Cool the workpiece upside down at room temperature.
