Stewed squash caviar

Appetizing squash caviar, stewed in tomato paste, turns out to be incredibly tender, with a soft texture and amazing aroma. A real treat of childhood! And it's so easy to make at home!

We wash the zucchini with water and cut them into small cubes.

Pour water into a saucepan and bring it to a boil. We send zucchini into it and cook them for 10 minutes. After that, we overturn them in a colander and let the water drain completely.

Preheat a frying pan with vegetable oil. We spread the zucchini and tomato paste, add salt and spices to your taste. Stir. Cover with a lid and simmer for 30 minutes over moderate heat.

Tip: you can grind the finished caviar with a blender until it becomes a delicate puree, or grind it with a fork. See for yourself which consistency you prefer.
