Making homemade squash caviar is not at all difficult. An appetizing vegetable snack to complement many of your meals. In addition, caviar can be prepared for the winter and it will delight you all year round.

We wash the zucchini, peel the seeds and peel, if necessary. Cut the vegetable into small cubes and send to stew in a pan.

Chop the onion and garlic. Grate the carrots. Add vegetables to the zucchini. Simmer for about an hour.

Remove vegetables from heat, add tomato paste, salt and pepper to them. Grind with a blender and send again to stew for 7 minutes. Add vinegar a couple of minutes before cooking, stir and remove from the stove.
