Zucchini caviar in a slow cooker with cubes

If you don't have a meat grinder or food processor at home, you can cut the caviar zucchini into small cubes with a regular knife. From seasonings, it is recommended to choose spices without a pungent smell, the addition of greens is also encouraged.

Wash and peel the vegetables, remove the seeds and pulp from the zucchini.

Cut carrots into round thin slices, onions into half rings or cubes.

Cut the courgettes into small cubes. Grate the garlic on a fine grater.

Pour zucchini into the multicooker bowl, add salt. Let stand for half an hour, liquid will stand out from the zucchini.

Add onions and carrots, salt, sugar to the zucchini. Pour in olive oil and tomato sauce, add seasoning.

Set the "Stew" mode in the multicooker and simmer the caviar for about 2 hours, not forgetting to close the lid. In 1 min. before the end of cooking, open the lid, put the garlic passed through a press and pour in the vinegar. Cook for another 1 minute, pour into sterile jars and roll up. Cool upside down and place in the basement.
