Oven baked squash caviar for the winter

Today we want to offer you a recipe for making squash caviar. The whole process of preparing vegetables takes no more than half an hour, after which the vegetables are baked in the oven and then pureed with an immersion blender. Thanks to baking in the oven, vegetables retain their useful properties and taste, so our caviar turns out to be very tasty and as healthy as possible.

First, prepare all the vegetables: peel and rinse the onions and garlic. We wash the zucchini, remove the stalk and peel the skin (if the zucchini is young, do not remove the seeds). Peel and rinse the carrots, rinse the tomatoes. We wash the bell pepper, remove the stalk and clean it from the seeds.

All vegetables, alternating, put in a baking bag, add salt, pepper, granulated sugar and shake the bag so that the spices, oil and vegetables are mixed. We put the bag in a baking dish, use a toothpick in the bag to make 2-3 punctures so that steam comes out of the bag during the cooking process. We put the vegetables to bake in an oven preheated to 180 degrees for 50-60 minutes.

We take out the finished vegetables from the oven, carefully open the bag so as not to burn themselves with the steam, and put them in a saucepan.

We carefully pour the broth that formed in the bag with vegetables into a bowl, we may still need it.

Slightly cooled vegetables are puréed with an immersion blender until smooth. If it seems to you that the mass is too thick, you can add a couple of tablespoons of vegetable broth to it.

Put the prepared caviar in clean sterilized jars, close the lids tightly and leave at room temperature until it cools completely. Then we remove the caviar for storage in the refrigerator.
