Fried squash caviar

Fried squash caviar, prepared according to our recipe, has a rich taste, golden orange color and subtle spicy notes. The entire cooking process takes about half an hour, but this is quite enough for the young zucchini to cook completely. To give the squash caviar a more pronounced taste, we add a little onion, tomato paste and spices. In the end, we have a great snack, let's get started!

We wash the zucchini under running water, remove the stalk and peel the peel. We rub them on a coarse grater, add a little salt, mix and leave for 10-15 minutes for the zucchini to let the juice out.

Peel the onion, rinse and cut into thin half rings. Put the onion in a preheated pan with vegetable oil and fry until golden brown.

Squeeze the zucchini from the juice that has separated, put it in a pan with the onion and fry over low heat for 15-20 minutes, stirring often so that they do not burn.

Then add tomato sauce or tomatoes chopped on a blender to the vegetables. Mix well and fry for 5-10 minutes to evaporate the liquid. The less liquid you get, the more often you need to stir the vegetables.

When the amount of liquid becomes half as much, add salt, paprika and black ground pepper to the caviar. Then we wash and finely chop fresh herbs and send them to vegetables, mix well again and fry until the liquid has completely evaporated.

At the very end, add chopped garlic to the caviar, mix well and remove the caviar from the heat, let it cool.
