If you want to bake bread without using yeast, then you should try kneading the dough with kefir. It gives lightness and splendor - the bread will not turn out to be heavy. Since the composition also includes baking soda, it is not recommended to knead such a dough for a long time, since the air bubbles released during the reaction of soda with kefir will simply evaporate ahead of time. Therefore, for baking, we select a program on an accelerated mode.

After all the ingredients have been placed in the bowl, place it in the bread maker, close the lid and select fast or ultra-fast baking mode. The name of the program depends, of course, on the model of a particular bread machine. It is important to understand that you need to make a quick knead, after which you immediately go to baking. The approximate weight for the program is 750 grams. Press the "Start" button. After the kneading stage, if desired, the surface of the dough can be lightly sprinkled with flour - this will give a specific dense crust. When the signal sounds for the end of the program time, we take out the bowl with the finished bread from the device.
By the way, if there is any doubt about the readiness of the bread, you can check the moisture content of the crumb using a wooden skewer. If there is still raw dough on the stick, you can set extra time on the baking program and bake the product. Remove the finished bread from the bowl by turning it over. Place the loaf on the wire rack and cool completely.
