Chicken tabaka is a national Georgian dish. It is prepared using aromatic spices in a special frying pan under pressure. At home, you can cook such a dish without much difficulty.

Wash the carcass and cut it across the breastbone. Then unfold the chicken like a book.

To make the chicken as flat as possible, use a hammer to hammer on both sides.
