How to cook chicken tobacco in the oven

Traditional tobacco chicken is cooked in a frying pan with a special press lid. Under the influence of oppression during frying, the chicken meat is fried until a delicious golden brown crust, while remaining very juicy on the inside. But you can cook tobacco chicken in the oven - it's even easier and faster. It is important to properly prepare the carcass and marinate it with high quality.

It is advisable to choose chicken or young chicken weighing about 600-700 grams for such a dish. In this case, the meat is more tender and in finished form it turns out to be really juicy. We wash the bird, dry it with a towel and cut it along the sternum, without touching the back. We open the carcass into a layer with its back up and beat it off with a kitchen hammer. To prevent splashes from flying around when beating, cover the chicken with cling film. The force is applied not to the fillet, but to the bones and joints, so that the carcass becomes completely flat and pliable.

Sprinkle the prepared carcass with salt, black pepper, paprika and garlic passed through a press. Rub the spices into the surface of the skin and meat with our hands. Leave the chicken to marinate for thirty to forty minutes.

Grease the baking tray with odorless vegetable oil. We spread the carcass on it with the back down. Preheat the oven to a temperature of 200 degrees and place a baking sheet with chicken in it. We bake for twenty minutes.

After the specified time has elapsed, turn the chicken over to the other side using a wide flat spatula and continue to bake for another twenty to twenty-five minutes.

Mix the tomato paste with two tablespoons of water. Ten minutes before readiness, grease the chicken with the resulting tomato mass from all sides.
