How to cook beef khashlama at home

The easiest way to cook khashlama at home is according to the Georgian recipe. It contains beef and is sure to cook with fat for a long time. Vegetables are not added to the dish. The cooked meat is sprinkled with salt and plenty of herbs and served on one large platter. From the herbs for this dish, only cilantro or parsley, dill are taken, other spices are not used. The recipe is suitable for a small family, and guests need meat at least 3 kg.

Rinse the beef (preferably with fat layers) under running water and cut into large pieces.

Transfer it to a cauldron or saucepan with a thick bottom and fill it with hot water. Place the pot over high heat and bring to a boil.

Drain the boiled broth and pour the meat with fresh cold water.

When the broth boils again, remove the froth from the surface and place a large onion, cut in half, into a saucepan. Cook the beef over low heat and covered with a lid for an hour.

For khashlama, prepare laurel leaves, black peppercorns and peel the chives.

Add these spices to the broth and cook for another 1.5 hours.
