There is nothing complicated in the preparation of a royal cheesecake with cottage cheese. It is enough to cook it at least once in your kitchen in order to master the necessary principle of mixing products. It all comes down to the formation of crumbly sand crumbs, a homogeneous curd filling and the subsequent formation of a cheesecake from these blanks. We start by making the curd filling. It is recommended to use cottage cheese with a high percentage of fat, since it has a more delicate consistency and provides the filling with a mild, rich taste.

We place the cottage cheese in a bowl, break the eggs to it and pour in half of the specified amount of granulated sugar. Add a pinch of vanillin for flavoring. Now we mix everything together. If you want to get a smooth, homogeneous mass, then it is better to punch the curd mixture with an immersion blender. If you prefer the filling with pronounced curd grains, then it is enough just to displace everything with a spoon and make sure that the sugar crystals dissolve. The curd filling is ready.

Let's move on to making sand crumbs. To do this, you need to cool the margarine in advance so that it is firm.

Chop the margarine into small cubes with a knife. Alternatively, three on a grater. After chopping, we spread it in a wide bowl.

Sift flour on top of the margarine, pour the remaining amount of granulated sugar, salt and baking soda. We mix everything together and grind with dry hands, so that in the end we get a fine crumbly crumb, as in the photo. Be sure to "mix" all the flour into the crumbs so that no dry residue remains.
