How to cook squid kebab on the grill

If you want to cook something interesting and unusual on the grill, we suggest paying attention to squid. From them you can cook a gorgeous barbecue that will surprise you both with its appearance and with the most pleasant taste.

We wash the squids with cool water, clean the surface, remove the internal cartilage. Remove the transparent film from the pulp. We cut the carcasses so that layers are obtained, which we then beat off with a kitchen hammer on both sides. It is important that the pulp softens but remains intact.

Cooking the marinade. Put soy sauce and olive oil in a blender bowl. Peel the garlic and put it in a blender. We control the number of cloves according to our own taste. Rinse the lemon, dry it, remove the zest and squeeze out the juice. Add lemon juice and zest to the bowl, as well as salt and black pepper. Grind all ingredients until smooth.

We put the prepared squid in a deep container and fill it with the prepared marinade. We mix everything with our hands, trying to evenly distribute the mixture over all the pieces of squid. Tighten the bowl with cling film and put it in the refrigerator for half an hour or an hour for pickling.

After pickling, cut each carcass along the long side into large strips. We string each strip on a skewer according to the principle of an accordion, as in the photo.

We prepare the brazier. The temperature of the coals for roasting should be lower than for cooking meat. We do not allow open flames. We send skewers with squid to the grill.

We cook the squid for about seven to ten minutes, periodically turning it in all directions. It is important not to overdry so that the squid does not become tough. A golden crust should form on the surface.
