How to cook lamb shurpa at home

The recipe for making lamb shurpa at home is quite in demand among our housewives. The cooking technology is simple: the products are alternately placed in a saucepan or cauldron and simmer until cooked. No culinary tricks or decorations are required and you have a natural and delicious meal for the whole family.

For shurpa, take lamb with ribs and pulp. Rinse the meat and cut into portions. Place it in a cauldron or saucepan with a thick bottom, cover with cold water and put on high heat. Remove the froth from the surface and cook the lamb over low heat and covered with a lid for one hour.

Peel and rinse the onions, potatoes, and bell peppers. Cut the potatoes into 4 pieces. Chop the onion into thin half rings.

Cut the pepper (can be of different colors) into large pieces.

Scald the tomato with boiling water or dipped in hot broth, then remove the peel. After an hour of boiling the lamb, put the chopped onion and the whole tomato into a saucepan. Cook the soup for another hour.

During this time, the lamb will cook well and the meat will easily separate from the bone. You can now put chopped potatoes and bell peppers in the broth. Put also a pod of hot pepper for aroma and taste, then discard it when the soup is cooked. Together with these vegetables, pour a pinch of all the spices into the broth. Then salt the broth boiled with vegetables to your liking. Simmer the shurpa over low heat until the vegetables are fully cooked.

Then turn off the fire. Add black pepper to the broth. Let the dish sit for 10-15 minutes. Lamb shurpa is ready. You can serve in deep bowls, sprinkle with chopped fresh herbs.
