How to make kvass from birch sap at home

According to the proposed recipe, you can make a real thirst-quenching drink at home, which can also be consumed by children. We prepare kvass from birch sap based on raisins, black bread and a small amount of sugar, and for flavoring, instead of traditional citrus fruits, add currant twigs.

Hold fresh birch sap for 2 days so that it becomes a little cloudy, which will better affect the taste of kvass. Carefully pour the required amount of sugar into clean plastic bottles, put raisins and a couple of slices of black bread, preferably a bread crust. Then place the currant twigs in the bottles.

Then pour the birch sap into these bottles through a watering can, without filling them to the very top.

Squeeze each bottle slightly with your hand to remove all air, and immediately screw the cap tightly. Place the juice bottles horizontally in a warm place (on the windowsill) for 3 days. During this time, the bottles will inflate as a result of fermentation.

After that, re-remove all the formed air from the bottles and leave the bottles with kvass warm for another 2 days. Then transfer the kvass to a cold, dark place.
