Cooking process

step 1 out of 11
Carefully sort out the milk mushrooms, clean them of debris and rinse several times in cold running water. Put the washed milk mushrooms in a deep container, fill with cold water. Put oppression on top, and leave for about two days. To get rid of the bitterness, change the water daily in the morning and evening.

Then drain the water. Rinse the milk mushrooms in cold running water. Cut large specimens into several parts.
step 3 out of 11
Put the milk mushrooms in a deep saucepan, salt, and cover with cold water, put on medium heat and bring to a boil, periodically removing the resulting foam. Reduce heat and simmer the milk mushrooms for about 25-30 minutes.
step 4 out of 11
Drain the boiled milk mushrooms through a colander and rinse well under cold running water. Allow excess liquid to drain.
step 5 out of 11
Prepare the marinade. Pour the required amount of water into a saucepan, add salt and granulated sugar. Put on fire and bring to a boil.
step 6 out of 11
Add bay leaves, cloves, allspice and dill seeds to the hot marinade.
step 7 out of 11
Peel the garlic and rinse in cold water, then chop finely with a sharp knife. Put the boiled milk mushrooms in a boiling marinade and cook over low heat for about 15-20 minutes. A couple of minutes before the end of cooking, pour in the vinegar essence and add chopped garlic. And cook the mushrooms for another 7-10 minutes.
step 8 out of 11
Prepare the jars, wash them thoroughly with detergent and a dishwashing sponge, then sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or boil in a saucepan.
step 9 out of 11
Fill sterile jars completely with milk mushrooms. Then spread the flavored marinade evenly over the jars.
step 10 out of 11
Tighten the jars well with sterile lids.
step 11 out of 11
Turn the jars with milk mushrooms upside down, wrap them in a warm blanket or a terry towel and leave in this state until they cool completely for about a day. Then turn the cooled jars with milk mushrooms over and transfer to a cool, dark place for storage.

Bon Appetit!
