How to salt honey mushrooms for the winter with vinegar

Salted honey mushrooms can be added to a salad or used to make soup, or you can season with oil and chopped onions and serve as a snack. It is better to replace vinegar for harvesting with apple cider, it is both healthier and less harsh than table vinegar.

Sort out the honey mushrooms, clean and rinse. Small mushrooms of the same size will look especially nice in a jar. Transfer them to a saucepan with 1 liter of cold water.

Place the saucepan over medium heat and simmer for 30 minutes after the brew has boiled. Remove the emerging foam with a slotted spoon. At the same time, put a second pot of water on the fire. Pour salt, spices and sugar into it. The marinade must be boiled.

Put the mushrooms in a colander and rinse a little. Transfer them to the marinade saucepan, bring to a boil and cook for 15 minutes, stirring occasionally. Add the vinegar 2 minutes before cooking.
