How to salt the waves in a hot way

The hot way of salting the waves is that before you start salting, the mushrooms need to be boiled. After the waves are well salted, they can be served on the table. In Russia, such a snack is considered a real delicacy.

Any size mushrooms are suitable for salting. They need to be sorted out, cleaned of debris and carefully washed, as they are very fragile. Cut large mushrooms into several parts, leave small ones intact. To get rid of the bitterness, soak the mushrooms in cold water for two days, while you need to change the water 3 times a day.

Then drain the water, put the waves in a saucepan, fill them with fresh water, add a little salt and cook them for 20 minutes after boiling. Throw boiled mushrooms in a colander.

Peel the garlic and cut into slices, wash the herbs. Place currant leaves, dill, cloves and pepper in a pot at the bottom of the bowl. Then lay out waves, currant leaves, dill and garlic cloves in layers, sprinkle each layer with salt. Cover the mushrooms with a plate and put a press on it, put the mushrooms in the refrigerator for 48 hours, during which time the mushrooms will start up the brine and decrease in volume.
