You can cook pre-made dumplings, which are sold at any grocery store. However, they definitely cannot replace homemade dumplings. For them, we will have to prepare the dough and filling ourselves. For the dough, we sift the flour several times in advance. This will enrich it with oxygen, and the resulting dough will be very soft and fluffy. Add sugar, half a teaspoon of salt and soda to the flour. Stir the dry mixture well.

Gradually we begin to add kefir to the flour. It is worth using it, as it is ideally combined with cherries. Stir the dough well with a spoon or whisk after each addition. After that, knead the dough with your hands a little. If it sticks to your hands a lot, add more flour. However, you cannot overdo it with it, as the dough can become hard. Form the dough into a circle. Put it in a bag or wrap it in plastic wrap. Refrigerate the dough for 20-25 minutes.

Let's start preparing the filling. Rinse the cherries several times in cold water. Move the berries to a towel to drain excess liquid. Pits must be removed from each berry. You can do this with a safety pin. In a small bowl, combine the sugar and starch to keep the berry juice from flowing out of the dumplings. Add the mixture to the cherries and mix the filling well.

Remove the dough from the refrigerator and transfer to a floured surface. Roll it out with a rolling pin. We need to make small circles out of it. To do this, use a regular glass. Lay out the finished circles at a distance from each other. It is advisable to cover them with cling film so that they do not dry out.

Put the cherry and sugar filling in the center of each circle. Try not to overdo it with the amount, as the dumplings can break during the cooking process. Firmly hold the edges of the dumplings together. They should not get cherry juice or sugar. Because of this, the dumplings can become unstuck during the cooking process.

Fill the pot with cold water. For 400 grams, we need 2 liters of water. If you are preparing a kilogram of product, you will have to use 4-5 liters. We move the pan to the fire. When the water boils, add salt to it and stir well. Dip the dumplings into the water quickly. Stir them with a slotted spoon so as not to damage the dumplings. Do this throughout cooking. So the dumplings will not stick together. When the water boils again, turn down the heat. Now cook the dumplings for another 5 minutes.When they float to the surface of the water, remove them from the pan and transfer to a colander. The finished dough should become transparent.

Serve in portions. You can grease the dumplings with butter, which must be melted in the microwave beforehand. You can also sprinkle it with powdered sugar or make cherry syrup for it.
