Cooking process
When the water boils, pour it from the pot into a glass. Add boiling water to the future dough. Stir the ingredients quickly for a very soft and elastic dough. At first it may seem to you that one glass of boiling water is not enough. However, do not stop stirring the dough. Its texture should eventually become more uniform and smoother. The dough should not stick to your hands.
You can knead the dough both on the table and on a special board. Be sure to sprinkle the surface with flour so that the dough cannot stick. We put the dough on the board. Knead it for a few minutes and shape it into a ball. Transfer the dough back to the bowl. Cover it with a towel or cling film. Let the dough sit for about 20-25 minutes. As a result, gluten should be released from the dough.
Let's start preparing the filling. The cherries do not need to be thawed. Just put it on a plate. Cherries must be pitted. This must be taken care of in advance. Pour 4 teaspoons of sugar and 2 teaspoons of potato starch into a plate. Mix the ingredients. If you don't have potato starch, you can safely replace it with corn starch.
Fill the pot with cold water. We transfer it to the stove. Wait until the water boils. Then add salt to the water and stir. We transfer ready-made dumplings to a saucepan. Mix them gently with a slotted spoon. You can also use the back of a spoon. This will prevent the dumplings from sticking to each other or to the bottom of the pan. When the water boils again, reduce heat and cook the dumplings until cooked through. This will take you about 5 minutes.
