Borsch, herring under a "fur coat", vinaigrette - the most common recipes with beets. Few experiment and cook other less familiar dishes from beets. Meanwhile, this sweet root vegetable can be successfully served as a side dish instead of, for example, potatoes, and also as an independent dish. We offer to peel the beets, cut into pieces, season with spices and butter and bake in the oven until soft without foil. Such a dish turns out to be fragrant, juicy, and characteristically sweetish. You can serve such beets on the table as a salad, as well as use as part of other dishes where a thermally processed root vegetable is required.

Rinse the beets thoroughly in running water. Next, cut off the peel and the remnants of the stems at the base with a thin layer. Dry each root vegetable with a paper towel. We cut the beets first into circles seven to eight millimeters thick, and then into transverse blocks five to seven millimeters wide. It turns out to be large straws. In general, of course, you can cut beets of any shape into pieces, but in cubes it looks especially aesthetic.

We take a baking dish and put the beetroot cubes into it. Sprinkle evenly with salt to taste and Provencal herbs.

Next, pour with olive oil. Stir the beetroot straws so that each piece is covered with herbs, salt and oil. The oil will not only give shine to the beetroot pieces, but also keep them from drying out when baked.

Preheat the oven to a temperature of 200 degrees. We put the form with beets on the middle level and bake for twenty to thirty minutes. During the indicated baking time, it is worth opening the oven a couple of times and stirring the beetroot pieces for even baking. By the end of cooking, we take a piece for a sample - if it is soft enough, then the vegetable is ready.

We take out the form from the oven. Then you can serve hot beets with poultry, potatoes, meat. You can let the dish cool and serve as a cold snack, dripping with balsamic vinegar and extra olive oil. Also, such baked beets can be used to make vinaigrette, borscht or any other dish if necessary.
