Prepare the marinade. Pour the required amount of cold water into a saucepan or other metal dish. Put on fire and bring to a boil. Then add granulated sugar, salt, cloves, black peppercorns, allspice and bay leaf. Boil for a couple of minutes and remove from heat. Cool completely.

In the meantime, peel the freshly frozen mackerel of fins, tails and head, carefully remove the entrails and films. Rinse the prepared fish under running water.

Prepare the container and put the prepared mackerel carcasses into it, fill it with completely cooled marinade, close the lid and place in the refrigerator for 2 days.
