How to salt fresh trout caviar

Like any other fish products, trout caviar goes well with lemon. Thanks to this, the caviar acquires a slight sourness and a pleasant citrus aroma. Also, when salting caviar, it is better to use not ordinary salt, but sea salt.

Free the fresh trout caviar from the ovary films in any convenient way.

Remove the zest from half of the lemon with a fine grater and squeeze the juice.

Pour water into a saucepan, bring to a boil, add lemon zest, continue to boil for another 3-5 minutes. Then add salt, stir and simmer for another 3 minutes. Let the brine cool to 50-45 degrees.

Place the caviar in the cooled brine and pour in the lemon juice. Leave the caviar for 15-20 minutes.

Then place the caviar on a sieve and let the liquid drain. Then leave the caviar for 15 minutes at room temperature.
