How to salt waves in a quick way

Volnushki are delicious mushrooms that grow in large groups from mid-summer to mid-autumn. Volnushki are great for canning and salting. I propose a recipe for salting waves in a quick way.

Thoroughly sort out and rinse the waves in cold running water.

Put the washed waves in a deep saucepan and cover with cold water. Put on medium heat and bring to a boil, then reduce heat and cook mushrooms for about 20-25 minutes, stirring occasionally and skimming off the foam.

Pour the cooked waves through a sieve or colander, and leave for a while to let the excess liquid glass.

Prepare the marinade. Pour the required amount of drinking water into a saucepan with a thick bottom, add salt and granulated sugar. Mix thoroughly. Put on fire and bring to a boil.

Add cloves, bay leaves, allspice peas, cumin and black peppercorns. Cook the marinade for another 3-5 minutes.

Put the waves in the marinade and cook for about 10-15 minutes.

In the meantime, prepare the jars, wash and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes. Place the hairs tightly in sterile jars, removing them from the marinade using a slotted spoon.

Top with citric acid and cover with hot marinade.

Roll up jars with little waves with sterile lids using a seaming machine.

Turn the jars with waves upside down, wrap them in a warm blanket and leave in this state until they cool completely for about a day. After the cans are completely cool, turn them over and move them to a cool, dark place for storage.
