Grilled squid is very tasty. Juicy, tender, with aromatic spices. Its pulp cooks very quickly, so you don't have to stand at the barbecue for a long time. Hot squids are the most delicious, after cooling they are no longer so juicy.

We wash the squids with cool water, clean the surface, pull out the internal cartilage. Remove the film from the pulp.

We cut the carcasses so that a layer is obtained. We beat off the resulting layers with a kitchen hammer from both sides. Do not beat too hard, it is important that the pulp softens, but remains intact.

We put the prepared squid in a deep container, add salt, black pepper, paprika, olive oil, lemon juice, soy sauce, ketchup. Peel the garlic and finely chop it with a knife or pass it through a press, then put it on the squid. Wash the parsley, dry and chop, pour the greens after the garlic for the squid. We mix everything with our hands, trying to evenly distribute the spices and herbs over all the pieces of squid. Tighten the bowl with cling film and put it in the refrigerator for an hour or two for pickling.

We prepare the brazier. The temperature of the coals for roasting should be lower than for cooking meat. We do not allow open flames. We place the pickled squid on a grid greased with vegetable oil and send it to the grill.
