We offer a simple and quick way to marinate crucian carp for grilling. We use mayonnaise and spices. This could be your favorite spice mix or just a versatile fish spice. Crucians literally in twenty to thirty minutes absorb the aroma and piquancy of the marinade and they can already be sent to the grill for baking.

We clean off the scales from the crucian carp, cut the abdomen longitudinally and remove all the insides. Remove the gills, tails and fins. We thoroughly rinse the processed carcasses with cool running water, after which we let the excess moisture drain.

Prepare the marinade in a separate container. Mix until smooth mayonnaise, lemon juice, as well as salt and fish spice mixture to taste.

We spread the prepared mixture to the carcasses of carp and distribute it with our hands throughout the fish. Leave the carp to marinate for twenty to thirty minutes.

We prepare a grill with embers. We put the marinated fish on a grid greased with vegetable oil and place on the grill. Cooking for about fifteen to twenty minutes in total. Turn the fish periodically for even browning.

Carefully remove the finished ruddy carp from the wire rack, trying to preserve the integrity of the crust, and transfer to a serving dish. Serve hot with herbs and fresh vegetables.
