Potato casserole with mushrooms

Potatoes in our latitudes are a very common product; they are boiled, stewed, fried, pounded, baked and cooked in many other ways. It goes well with many vegetables and meats. But there is nothing tastier than potatoes with mushrooms.

Rinse the vegetables and peel them.

Cut the potatoes into small pieces and boil in a little salted water.

Finely chop the onion, grate the carrots on a coarse grater.

Cut the champignons into small wedges.

Fry onions and carrots in sunflower oil until golden brown, add spices to taste.

Fry the mushrooms separately. After the liquid has evaporated, salt and season the mushrooms.

Puree the boiled potatoes. To do this, add butter and sour cream to the potatoes. Whisk the mashed potatoes with a blender until smooth.

Grease a baking dish with oil and put the potato mass into it. Brush the surface of the casserole with one beaten egg. Place the form in an oven preheated to 200 degrees and bake for 45-50 minutes. Serve the dish hot, along with sour cream or other sauces.
