Blue plum ketchup

Ketchup is a universal sauce for any dish. Traditional ketchup is made from ripe tomatoes. I suggest making a spicy blue plum ketchup, which is perfect with meat and poultry dishes.

Wash and dry plums, bell peppers, hot peppers and cilantro. Cut the plums in half and remove the seeds, peel the poultry and hot peppers from the core and seeds. Peel the garlic. Grind the food with a food processor. Put chopped vegetables in a saucepan with a thick bottom, add granulated sugar and table salt.

Add tomato paste and black pepper. Use a hand blender to bring the vegetable mass to a homogeneous consistency. Place the saucepan over medium heat and bring to a boil. Reduce heat and simmer the ketchup for about 30 minutes. Wash the jars thoroughly and sterilize in the microwave or oven. Boil the lids in a saucepan.

Using a ladle, gently pour the hot blue plum ketchup into sterile jars. Screw on with sterile caps or roll up with a seaming machine. Turn hot jars of ketchup upside down, wrap it in a warm blanket and leave in this position until it cools completely. Then store in a cool, dark place.
