Plum ketchup with tomato paste

Ketchup is a widespread sauce made from ripe tomatoes. Tomato sauce is suitable for a wide variety of dishes, both cold and hot. Culinary experts are constantly experimenting and preparing ketchup in different ways. I suggest making a spicy ketchup with plums and tomato paste.

Wash the tomatoes thoroughly, make a cross-shaped incision and immerse them in boiling water for literally 1 minute. Use a slotted spoon to transfer the tomatoes to the ice water and then gently peel them off. Remove the stalk and cut the tomatoes into wedges.

Wash and dry the plums, cut in half and remove the seeds.

Peel the onions, rinse in cool water, chop in a blender bowl or pass through a meat grinder.

Put the prepared ingredients in a deep saucepan with a thick bottom, add the required amount of tomato paste, put on medium heat, bring to a boil, reduce heat and simmer for about 1.5 hours over low heat.

Remove the saucepan from the heat and let cool slightly. Then grind with a hand blender or rub the mass through a sieve. Transfer the crushed mass back to the pan, add table salt, granulated sugar, red ground pepper and cloves. Put on low heat and simmer for another 15 minutes after boiling.

5 minutes before the end of cooking, pour in the vinegar and mix well.

Wash the jars thoroughly and sterilize in the microwave or oven. Boil the lids in a saucepan. Pour the hot ketchup into sterile jars with a ladle. Screw on with sterile caps. Turn the ketchup jars upside down, wrap them in a warm blanket and leave to cool completely. Then store in a cool, dark place.
