Sweet and sour apricot sauce for the winter

Sweet and sour apricot sauce is ideal with chicken and many types of fish. It turns out to be very delicate in consistency, but at the same time rich in taste. During apricot season, when you can easily buy these fruits, be sure to prepare this sauce for the winter.

Sort and rinse the apricots. Divide them in half with your hands, or cut them. Remove the bones. Then cut each half into 4-6 more pieces.

Wash the apple. Remove the stalk. Cut into 4 pieces and remove seeds. Peel the apple off, if desired. Then cut into small cubes.

Wash the lemon as well and cut into thin slices.

Peel the garlic cloves and rinse. Chop finely, pass through a press or grate on a fine grater. Cut a small piece from the ginger root, peel and grate.

Pour vinegar and sugar into the saucepan where the sauce will be cooked (if you do not have brown sugar, then it is acceptable to replace it with regular granulated sugar). Light the fire and, while stirring, wait until the sugar is completely dissolved in the vinegar. Transfer the sliced ​​apricots, apples and lemon to a saucepan. Add curry and cumin. Season with salt and add a pinch of hot ground pepper. Cook until thickened over low heat. Then add the grated ginger and garlic. Stir the sauce and cook for another 10 minutes.

Sterilize the jars you will use to roll the sauce. Since it is preferable to use small jars, it is more convenient to sterilize them in an oven or microwave oven, after pouring a little water into each jar. Pour the sauce into the jars and immediately close the lids tightly. Sweet and sour apricot sauce will become especially tasty about a month after you roll it up.
