Classic kefir dumplings with cherries

If you have a lot of fresh cherries left, and you don't feel like eating at all, pay attention to this recipe. It is very simple to prepare such a dish. And you can definitely find all the necessary ingredients in your kitchen or at the nearest grocery store.

Pour kefir into a small but deep bowl. Add half a teaspoon of salt and half a teaspoon of baking soda to it. Stir the resulting mixture well. Keep track of how much baking soda you add. If you use more of it than is indicated in the recipe, its taste will be strongly felt. Thanks to soda and kefir, the dough will turn out to be very fluffy.

Flour must be sifted in advance using a sieve. It is advisable to do this several times. So you will remove various debris that may be in the flour and enrich it with oxygen. Then the dough for dumplings will turn out to be very airy. You need to add flour to kefir gradually, in small portions. Stir the dough well with a spoon after each addition.

Sprinkle flour on a wooden board. Put the dough on it and continue kneading it with your hands. Add a little flour as needed. Do not overdo it, however, as the dough may dry out. Form them into a dough ball. It should be soft and elastic. Wrap it in cling film and send it to the freezer for 20-25 minutes.

For the filling, rinse the cherries well. Do this several times. Place the berries on paper towels. They will absorb excess moisture. Now we need to remove the seeds from the berries. It is very easy to do this with a safety pin. Then transfer the berries to a bowl. In another bowl, combine the sugar and cornstarch. You can use potato starch instead.

Remove the chilled dough from the freezer. Transfer it to the table, which you need to sprinkle with flour in advance. As a result, the thickness of the dough will be approximately 3 millimeters. Use a special shape to make small circles out of the dough. You can use a mug or glass instead.

In the center of each circle, first place a mixture of starch and sugar. Put a few cherries on it. Their number may vary depending on your desire. Make sure that the juice of the berries does not get on the edges of the dough. Because of this, dumplings may come unstuck during cooking. Tie the edges of the dumplings together tightly. Place them on a board, spaced apart.

We fill the pot with water. Place it on a hot stove. When the water boils, add a little salt to it. Stir everything well. After that, immediately put the dumplings in the water. This will prevent them from sinking to the bottom of the pot and sticking to it.Stir the dumplings constantly with the back of a spoon. This will prevent the dumplings from sticking together. When the water boils again, reduce heat and cook for 5 minutes.
