The Georgian dish chicken tabaka has long become multinational and everyone brings their own flavor notes to this dish. But one thing remains unchanged - this is the way the chicken is cooked under the press.

Combine chopped garlic and salt in one bowl and pepper, coriander, paprika and cumin in the other.

Rinse the chicken thoroughly under running water and blot off excess moisture with paper towels. Cut it in the middle of the breast and spread it out.

Place the chicken back up, cover with cling film and beat with a kitchen hammer, then turn the chicken over and beat on the other side.

This will make the carcass flat and more convenient to fry in a pan.

Lubricate the inside of the carcass with a mixture of garlic and salt.
