Strawberries in syrup without cooking for the winter

For this recipe, you need to choose a medium-sized berry that is not overripe in order to preserve the original structure. The jam turns out to be very aromatic and retains the beneficial properties of strawberries, since the berry itself does not undergo heat treatment.

Rinse the strawberries thoroughly under running water, clean them from the green tails and discard them in a colander, allowing all the liquid to drain.

Prepare syrup in an enamel bowl: mix water with sugar and bring to a boil over low heat, stirring actively, not allowing it to burn. We continue cooking for 5-7 minutes, until thickened.

Remove the finished syrup from the stove and pour in the berries. The strawberries will give their juice, due to which, the sugar syrup will acquire a liquid consistency.

When the syrup becomes liquid, pour it back into the saucepan and set on maximum heat. Bring to a boil and immediately make the minimum flame, boil for 6 minutes. Pour the berries with hot syrup a second time, cool and repeat the procedure twice more.

After that, fill the strawberries with syrup again and roll them up using a special machine. We turn the banks upside down and cover with a blanket.
