Apricot compote with mint and lemon

This tonic and apricot compote with citrus flavor is so pleasant to drink on hot days. If you put a couple of ice cubes in a glass and garnish with a leaf of fresh mint, this drink will not be inferior to the signature Mojito served in a cafe.

Wash the apricots thoroughly under running water. Divide them in half, taking out the bones.

Put the fruit in a prepared sterile jar, send a branch of washed mint there and cover everything with sugar. Wash the lemon and squeeze 1 tsp. juice. Add it to the jar.

Boil water and pour into the jar and screw it on with a lid.
