Appetizing apricot compote for the winter is an irreplaceable preparation that will help preserve priceless fruits with vitamins. The apricot compote turns out to be rich, aromatic and moderately sweet. The apricots themselves can be eaten or added to various dishes.

Rinse ripe apricots without dents or damage in running water, then divide the fruits in half and remove the seeds from them.

Put apricots in a sterile three-liter jar and immediately pour boiling water to the brim. Cover the container with a lid and leave to infuse for fifteen minutes.

When fifteen minutes have passed, drain the water from the jar into a saucepan, add sugar to the water and boil the syrup. After the mixture of water and sugar boils and the sugar crystals dissolve, the syrup is ready.

Fill the jar of apricots with boiling syrup, then roll up the jar with a sterile lid and turn it upside down. After the compote has cooled, store it in a dark place.
