The apricot season is rather short. To keep the taste of apricots with you for the whole year, simply roll up the compote. It is very easy to prepare, and as a result, you will get not only a delicious drink, but also an excellent fruit filling for pies or an addition for curd desserts.

Pour water into a saucepan and place it on the stove. Bring to a boil and pour immediately into the apricot jar. It is necessary to fill the jar halfway, cover with a lid and let stand for 5 minutes. Then add boiling water to the very top of the jar. Cover the jar with the lid again and let the apricots heat for 25-30 minutes. Do not leave them in boiling water for a longer time, or they will lose their shape.
Add sugar and citric acid to an empty saucepan. Drain the apricot jars into it. It is very convenient to do this by putting a special lid on the jar with a hole with a spout for draining. Bring the sugar and citric acid water to a boil. Pour the apricots in the jar with it again (if you wish, you can add a couple of lemon slices directly to the jar) and screw it tightly with the lid. Turn the rolled jars upside down and leave in this position until they cool completely.
