Apricot compote wedges

According to this recipe, the apricot compote is prepared in slices simply. It does not need boiling and sterilization, is not sugary sweet, retains the natural aroma of apricot well and is stored reliably.

For cooking, choose dense, whole and unripe apricots so that they retain their beautiful appearance in the compote. Wash the fruits well under running water.

Use a sharp knife to cut the apricots along the groove and remove the pits.

In a large saucepan or two small ones, put the calculated amount of water to boil (this is 8 liters). Wash the jars with soda and sterilize in any way.

Boil the seaming lids in a separate saucepan.

Arrange the halves of the apricots in the jars, filling them 1/3 of the volume. Pour boiling water over the apricots until the water covers the fruits. Cover the jars with lids and leave for 20 minutes.

After this time, pour the water from the cans through a special lid back into the pots and bring it to a boil. Pour a glass of sugar into each jar.

Re-pour the apricots with boiling water with sugar, filling the jars to half the volume. Place the lids on the jars and twist each jar to dissolve the sugar completely.

Then fill the cans with boiling water to the very top, even so that the water overflows a little. Roll up the jars, then turn them over onto the lids and cover with a warm blanket for a day. Transfer the chilled apricot compote in slices to the storage location.
