Apricot and cherry compote

Delicious and aromatic compote of apricots and cherries will perfectly quench your thirst both on a hot sunny and cool autumn day. Apricots give the compote a pleasant sweetness, cherries fill it with its own aroma, and the addition of lemon juice gives the compote pleasant notes of acidity and citrus freshness.

For compote, choose ripe cherries and juicy dense apricots. We wash the cherries in a colander under running water, fold them on a towel so that they dry. Then we remove the stalks. We wash the apricots and put them on a towel to the cherries so that they dry out a little. Then divide the apricots in half and remove the pit. We wash the compote jars with baking soda, rinse well with water and sterilize in the oven at 110 degrees for 7-10 minutes.

Pour water into a saucepan, put on fire and bring to a boil. Put the cherries in a jar and pour boiling water over 2/3 of the jar, leave for 40-45 minutes.

Add sugar, juice of half a lemon to a saucepan with water, mix and bring the syrup to a boil. Then we boil the syrup for a minute and remove from heat.

Put halves of apricots in a jar with cherries and pour hot syrup into the jar. We close the jar with a boiled lid, turn the jar upside down, cover with a terry towel and leave to cool completely at room temperature. Then we remove the compote for storage in a dark, cool place. Compote is ready!
