Compote of apricots and cherries in a 3-liter jar for the winter

Apricot compote with sour cherries is a refreshing drink that perfectly quenches your thirst. All ingredients can be collected in your own garden, and accordingly, there will be no preservatives in the composition, unlike purchased soda.

We prepare the main products: we sort out only ripe dense apricots, we sort out the cherries and leave only those berries on which there are no signs of damage and parasites.

We wash the cherries thoroughly, remove the twigs, and leave the seeds. We spread it on a cloth or paper towels to dry the berries.

Cut the apricots in half and take out the seeds.

Rinse the jars with soda solution, pour over boiling water and wipe dry. Then we fill the container 1/3 with prepared fruits.

Boil about 3 liters of water in a saucepan or kettle and fill the jars, covering them with lids on top. Leave to warm up for 30-35 minutes.

After half an hour, return the solution to the dish and bring it to a boil again, but this time add sugar and stir until the crystals are completely dissolved.

Immediately after boiling, return the syrup to the jars and leave for 20-25 minutes. It is advisable to cover the glass container with a towel.

Then we boil the sugar pouring for the last, third time. Bring to a boil and immediately remove from heat.

Immediately fill the filled cans and roll them up using a special machine.

Leave the finished compote to cool for at least a day. To check the tightness, it is recommended to put the jars on the lids and cover them with a blanket for gradual cooling.
