Apricot and apple compote in 3-liter jars for the winter

For the preparation of apricot-apple compote, opt for sweet and sour apples. It is their sourness that will advantageously beat and complement the taste of sweet and aromatic apricots. This recipe is suitable both for rolling compote for the winter and for preparing a drink in the summer.

Sort out the apricots. Throw away any spoiled fruit. Wash them by placing them in a large, deep bowl of water, then transfer to a colander and rinse under running water. Let them dry. After that, remove the seeds from the apricots and cut them into arbitrary pieces.

Rinse and dry the apples. Remove the stem and core and cut into wedges.

Wash the jars with baking soda and sterilize. You can sterilize cans over steam using a special nozzle on a saucepan or oven. In a microwave oven for sterilization, a three-liter jar simply does not fit. The lids must also be sterilized by keeping them in boiling water for about 5 minutes. Place the apricots in the prepared container, filling it almost halfway. Send apples to the jar. About a third of the amount of apricots. Pour granulated sugar into the jar with the fruit.

Bring water to a boil in a saucepan or kettle and pour it over the fruit to the very top of the jar. Cover the jar with the future compote with a lid.

In a deep saucepan, sterilize the jar of compote. To do this, put the jar in a saucepan, pour water until the jar begins to taper off at the top and simmer over low heat for 15 minutes (time after the water boils).

After sterilization, remove the jar from the pan, close it tightly and leave to cool by turning it upside down and covering it with a blanket or towels. After the jar of apricot-apple compote has completely cooled down, put it in a cool place for storage.
