Apricot compote for the winter without sterilization

Such compote is prepared quite simply and quickly. There is no need to pre-cook and sterilize it. You just need to properly prepare the cans in order to ensure optimal conditions for storing the drink and to avoid the risk of spoilage. We suggest peeling apricots immediately.

To make the compote tasty, we select ripe, high-quality fruits for its preparation. We thoroughly wash the apricots to remove dirt. Let the excess moisture drain.

We cut each apricot into two parts and remove the pit.

Banks and lids are pre-washed with running water. We place each jar over boiling water for a few minutes so that the steam disinfects the surface.

We lower the lids in boiling water, stop boiling the water, and leave the lids for twenty minutes also for disinfection. After that, we take out the covers and let them dry completely.

Arrange the halves of the apricots in the jars. Pour boiling water over them so that the fruits are completely covered, but not to the top of the jars. We soak the apricots in hot water for twenty minutes. Then we drain the water from the cans into a separate saucepan.

Add granulated sugar to the jars to the scalded apricots, distributing the specified amount of sugar evenly to all the jars.

Bring the drained water in a saucepan to a boil and fill it with apricots with sugar in jars. Rotate the jars slightly so that the sugar begins to dissolve.

Then add boiling water to the jars and roll them up with sterile lids. Cover the sealed compote with a blanket or blanket and let it cool slowly, after which we put it in a cool dark place for storage.
