Ingredients

Cooking process

step 1 out of 6
For the compote, we select ripe dense apricots, rinse them under a stream of warm running water, put them on a kitchen towel and leave them for 15-20 minutes to dry out a little.
step 2 out of 6
We wash the compote jar with baking soda, rinse well with warm running water. We fill the jar with apricots.
step 3 out of 6
It is best to use filtered water for compote, then the taste of the compote is softer. Pour water into a saucepan, put on fire and bring to a boil. After the water has boiled, pour it into a jar of apricots and leave the fruit to blanch in boiling water for 5-7 minutes.
step 4 out of 6
After the time has elapsed, we put on a nozzle with holes on the neck of the jar and pour the water from the jar back into the saucepan, add sugar, put on fire and bring to a boil. After the syrup has boiled, remove it from the heat, add citric acid to the jar and pour hot syrup into the jar, filling it to the brim.
step 5 out of 6
Close the jar tightly with a boiled lid, turn it upside down and leave it to cool completely at room temperature, covering it with a terry towel.
step 6 out of 6
We put the finished compote for storage in a dark, cool place.
