A delicious rich apricot compote with a pinch of vanilla is an amazing drink that can be served both on a festive and on an everyday table to quench your thirst. A large number of apricots that we add to compote can be used as filling in baked goods and filling in yogurt and cottage cheese. The compote turns out to be concentrated, therefore, after uncorking the can before use, it must be diluted with boiled water, as a result of which you will receive a large amount of the drink.

For the preparation of compote, we select ripe dense apricots. We rinse them under running water and put them on a kitchen towel so that they dry out a little.

We wash the jar for compote with baking soda, rinse it thoroughly with running water and sterilize it over steam for 7-10 minutes. Then let the jar cool down a little. We put the prepared apricots in a jar.

Put on the fire to boil in water, after which we pour boiling water into a jar and leave the apricots to blanch for 25-30 minutes under a covered lid.

After the time has elapsed, we put on a special nozzle with holes on the jar and pour the water back into the pan. Add sugar, mix and set on fire. Bring the syrup to a boil, add vanilla and remove from heat. Pour the hot syrup into a jar, seal it tightly with a boiled lid and turn it upside down. We wrap the jar with a terry towel and leave at room temperature until it cools completely. Then we remove the compote for storage in a dark, cool place.
