Apricot pitted compote with citric acid

Apricot compote is a great drink prepared with your own hands for the winter from aromatic apricots that have ripened under the rays of the warm summer sun. Moderately sweet, with hints of sourness that citric acid added during the preparation adds to the compote, with an amazing aroma of apricots. Preparing a jar of such a delicious drink for the winter, you stock up not only with compote, but also with a handful of delicious ripe apricots, which, after opening the jar, can be used as a filler for cottage cheese and yogurt, filling in homemade cakes, or just enjoy this magnificent fruit.

For harvesting compote for the winter, we select dense apricots, maybe a little unripe. Since apricots will be sterilized during the harvesting process, the use of soft and overripe fruits is not recommended, they will lose their shape, and the compote will turn out cloudy. We wash the apricots under a stream of warm running water and put them on a kitchen towel so that they dry out a little. Jars for compote only need to be rinsed well with baking soda, there is no need to sterilize them. We put dried apricots in prepared jars and cover with sugar.

Pour clean filtered water into the kettle and put it on fire. Bring water to a boil, remove from heat and pour into jars.

We put the cans with compote in a deep saucepan, at the bottom of which is a cotton napkin and pour warm water into the pan so that it covers the cans up to the shoulders.

Cover the cans with seaming lids and set the pot over medium heat. Bring the water in a saucepan to a boil, reduce the heat and sterilize the compote for 10-15 minutes. At the end of sterilization, add citric acid to the jar and remove the pan from heat.

We carefully remove the jars with sterilized compote with the help of clamps from the water and tighten the lids tightly. We turn the cans upside down and leave to cool completely at room temperature, covering them with a warm blanket.

We store the jars with ready-made compote in a dark, cool place, where they can be stored for several months. It is not recommended to store compote with seeds for a long time, as it is saturated with harmful substances that are released from the seeds.
