Sweet and sour cherry plum compote, properly prepared, is loved and prepared for the winter by many housewives, because it has a special taste, and fresh cherry plum becomes very tasty. 2-liter jars are filled with cherry plum at least 1/3 of the volume and sugar is added at the rate of 1 glass per jar. We prepare compote using the method of single pouring. The jars must be clean and sterile, and the cherry plum must be intact, then the compote will be well stored. The cherry plum variety (yellow, red or dark) is chosen at your discretion, because it does not affect the taste.

Sort out cherry plums for harvesting compote, removing damaged and wormy specimens. Then rinse it well under running water. Wash the jars with baking soda in advance and sterilize them in any way. Transfer the cherry plum to a 2-liter jar, filling it by 1/3 of its volume.

In a separate saucepan, boil the syrup from the volume of water calculated for the number of cans and 1 cup of sugar per can. Boil the syrup over low heat for 3 minutes.

Then pour the cherry plum in the jars with boiling syrup, pouring it in little by little so that the glass does not burst. Fill the jars with syrup to the very top.

In hot syrup, the peel of some berries may burst, but this is normal, because the fruits themselves remain intact.

Roll up the jars immediately with boiled lids. Check that the seaming is secure, place the cans on the lids overnight and cover with a warm blanket.
