Bird cherry and currant compote

Bird cherry is a useful plant that is quite common in many countries of the world. It is used for both culinary and medicinal purposes. It has anti-inflammatory properties and boosts immunity. If you want to make compote from it, it is best to add other berries to the preparation, since bird cherry does not have a pronounced taste. Today we will prepare cherry compote with black currant. The compote turns out to be very rich with a bright ruby ​​color.

We wash the black currant berries in a colander under a stream of warm running water and leave for 15 minutes to drain the water. Then we remove the berries from the branches.

We also wash the bird cherry berries in warm running water, dry them and remove the stalks.

Pour boiling water into 1/3 jars with berries, leave the berries for 2-3 minutes, then add boiling water to the neck of the jars.

Then we put on special lids with holes on the jars and pour the boiling water into the pan, while the berries remain in the jar. Add sugar to the saucepan, mix well and put on fire.

Cork the jars with boiled lids, turn them upside down and leave to cool completely at room temperature. Then we remove the jars with compote for storage in a dark, cool place.
