Bird cherry compote for a 2-liter jar

Bird cherry is a stunningly beautiful plant. It gives us a stunning smell of fragrant flowers at the end of May and bears fruit in July-August, from which you can make delicious seaming. Today we will start making bird cherry compote. The compote turns out to be of a dark rich color with the taste of ripe berries.

We sort out the berries of the bird cherry, remove the leaves. Put the bird cherry in a colander and rinse well under a warm stream of running water. We leave the berries in a colander to drain the water, then separate the berries from the branches.

Pour water into a saucepan, put on medium heat and bring to a boil. Once the water has boiled, add sugar and stir with a wooden spoon. After boiling water with sugar, foam forms on the surface of the syrup, which we remove with a wooden spoon and remove the syrup from the heat.

Pour water into another saucepan, put on fire and bring to a boil. After the water has boiled, we lower the bird cherry into it for 2-3 minutes. We take out the berries with a slotted spoon and transfer them to hot syrup.

In syrup, the berry should be at least 5 hours. Then we lay out the berries in clean sterilized two-liter jars, put the syrup on the fire again, bring to a boil, pour into the jars and close with boiled lids. We wrap the jars with a warm blanket and leave to cool completely at room temperature. Then we remove the jars with compote for storage in a dark, cool place.
