Bird cherry compote with lemon

Bird cherry compote is harvested because of its unique beneficial qualities and excellent taste. These properties of bird cherry are maximally revealed only in blanks. The berries themselves have a tart and sweet taste, and the addition of lemon will acidify the drink and give it a pleasant citrus flavor. The bird cherry compote is prepared by infusing berries in syrup and without sterilization.

Separate the cherry berries from the branches, clean them of small debris and rinse them well in a colander with running water.

In a separate saucepan, boil the syrup from the calculated amount of water and sugar for the volume of bird cherry berries. Boil the syrup for a few minutes.

Pour clean water into another large saucepan and boil it. Transfer the washed bird cherry to boiling water for 5 minutes. Then drain the water from the berries and fill them with sugar syrup. Cover the saucepan and leave the bird cherry in the syrup for 5 hours.

After this time, put the bird cherry in pre-sterilized jars, filling them with berries by 1/3 of their volume.

Rinse the lemons well, pat dry with a napkin and cut into small pieces. Then transfer them to jars to the berries.

Boil the syrup again and pour over the bird cherry and lemon in jars, filling to the very top. Roll up the jars with boiled lids, turn them upside down and cover them with a warm blanket for a day. The chilled compote should turn into a beautiful ruby ​​color. Store it in a dark place. It will be possible to drink bird cherry compote only in a month, not earlier.
