Pitted sweet cherry compote for the winter

Pitted cherry compote allows you to make this winter preparation with a concentrated taste and rich aroma. Recently, it has become popular to prepare a thick cherry compote by adding pectin to it. Such compote is diluted with water before drinking, and berries can be a good filling for baking. The most difficult part of this cooking process is the pitting. Compote is being prepared with mandatory sterilization.

First sort the freshly picked cherries, remove damaged berries, small debris and carefully so as not to damage the pulp and stalks. Then rinse the cherries with cold water and shake off excess liquid in a colander.

Remove the seeds from the cherries using any tool. This can be done with a pin, a sharp object, or special pitting devices.

Be sure to weigh the amount of pitted cherries according to the recipe and the planned volume of harvesting.

Then in a separate saucepan, boil the syrup from the required amount of pure water and sugar. Add pectin to the hot syrup, transfer the prepared cherries and stir gently with a spatula.

When the compote boils, remove all the foam from the surface and add half a teaspoon of citric acid to it. Then turn off the fire.

Pour the compote into clean jars. For this workpiece, liter or half liter is usually used. Be sure to sterilize the compote according to the general rules for 10 minutes. Seal the jars and cool them under a warm blanket and upside down. A thick pitted sweet cherry compote is ready. Store it in a dark and cool place.
