Cherry and raspberry compote for the winter

Compote from one sweet cherry, although a healthy and tasty berry, is obtained with a neutral taste, and it is often supplemented with various berries or fruits. One of the delicious options would be a cherry compote with raspberries. It is prepared simply: the cherries are washed with water - and immediately into the jar, and the raspberries do not need to be washed. It is important for the compote to choose undamaged and non-wormy berries. It is better to take cherries of a dark color so that the compote turns out to be beautiful. In this recipe, we prepare a single-pour compote with a high sugar content. It will be concentrated, but it will be well stored, and it can be diluted with water before drinking.

First, prepare in the calculated amount, berries and sugar. Rinse the cherries with cold water, and simply sort out the raspberries, removing sepals and small debris. Sterilize liter jars and lids as for ordinary blanks.

Put the prepared cherries and raspberries in jars, filling them by 1/3 of their volume, but if you wish, you can put more berries.

Then add sugar to each jar.

Boil clean water in a kettle and pour boiling water over the berries with sugar, filling the jars with boiling water to the very top of the neck.

Immediately seal the jars hermetically with conventional or sterile screw caps.

Since the sugar will settle to the bottom of the jars, take a towel in your hands and turn them over several times so that the sugar dissolves well.

Then put the jars of compote on the lids.

Cover them tightly with a towel and leave to pasteurize and cool overnight. Cherry and raspberry compote is ready. Store it in a dark and cool place.
