Cherry and mint compote for the winter

As one of the options for cherry compote, there will be a recipe for its preparation with the addition of the flavor range, with fresh mint leaves. A little lemon or citric acid is often added to it, because the cherry itself is quite sweet. A compote is prepared from dark-colored cherries and with a stone, which makes the taste of the compote more intense. This compote quenches thirst well, is suitable for soaking a cake and making interesting cocktails. We prepare compote without sterilization and the ingredients are given for a liter jar.

Prepare in advance, in the amount indicated in the recipe, all the ingredients, based on the volume of your cherry preparation. Sterilize jars and lids immediately in any way.

Separate the mint leaves from the sprig, rinse them with water and dry with a napkin. Place the mint on the bottom of a sterile jar.

Rinse the lemon with a brush, scald with boiling water and cut into thin slices along with the peel. Place a few slices in a jar over the mint.

For compote, choose whole and firm cherries. Rinse them with cold water and place them in a jar on top of the lemon.

Pour the calculated amount of sugar directly into the jar on top of the cherries. You can change the amount of sugar to your liking.

Pour boiling water over the cherries in a jar, filling it to the very top.

Then cover the jar with a sterile lid and wrap it well with a terry towel for 1.5 hours. During this time, the cherries will be saturated with sugar syrup, the aroma of mint and lemon, and the berries will remain intact.

After this time, pour the syrup from the jar through a special lid into a saucepan.

Boil the syrup, then pour it into a jar and seal the compote tightly. Put the jar on the lid and cover with a warm blanket or the same terry towel for 12 hours.

Store the cooled compote in a cool, dark place. It will keep well for a year.
